Strawberry Pineapple Daiquiri (Printable)

Vibrant strawberry and pineapple blend frozen in convenient pouches for effortless summer enjoyment.

# What you need:

→ Fruit

01 - 2 cups fresh or frozen strawberries, hulled
02 - 1 cup fresh or frozen pineapple chunks

→ Liquids

03 - 1 cup white rum
04 - 1/2 cup fresh lime juice, approximately 4 limes
05 - 1/2 cup simple syrup
06 - 1/2 cup water

→ Optional

07 - 1 tablespoon agave syrup or honey for additional sweetness

# How to make it:

01 - Combine strawberries, pineapple, white rum, lime juice, simple syrup, and water in blender. Process until completely smooth. Taste and adjust sweetness with additional syrup if desired.
02 - Distribute blended mixture evenly into 6 resealable freezer-safe pouches, filling each approximately two-thirds full. Seal tightly and press out excess air.
03 - Arrange filled pouches flat in freezer and freeze for minimum 6 hours until completely solidified.
04 - Remove pouch from freezer. Gently knead or run under warm water briefly to soften mixture. Pour into glass or serve directly from pouch using straw.

# Helpful Hints:

01 -
  • Make them Sunday night and forget about the work until Thursday's gathering, when you just grab a pouch and pour.
  • The strawberry and pineapple balance creates something bright and less boozy-tasting than you'd expect, so even people who usually skip cocktails end up having two.
  • Six pouches means you're ready for actual social time instead of being trapped behind a bar.
02 -
  • Squeeze your own limes instead of using bottled juice, because bottled tastes thin and chemical-forward in a frozen drink where there's nothing to hide behind.
  • Don't overfill the pouches past two-thirds or they'll split when the mixture expands during freezing, which I discovered the hard way and cleaned up in the worst way.
03 -
  • Taste the mixture before freezing because you can't fix sweetness once everything's solid, and this is your only window to adjust.
  • Run the sealed pouch under warm water for just a few seconds instead of longer, because a little bend is drinkable but completely melted defeats the entire frozen pouch purpose.
