Keto Bacon-Wrapped Zucchini Boats (Printable)

Tender zucchini stuffed with herbed cheese and wrapped in crispy bacon for a flavorful low-carb dish.

# What you need:

→ Vegetables

01 - 2 large zucchini
02 - 2 tablespoons olive oil

→ Cheese & Dairy

03 - 4 ounces cream cheese, softened
04 - 2 ounces shredded mozzarella cheese
05 - 1 ounce grated Parmesan cheese

→ Herbs & Seasonings

06 - 2 tablespoons chopped fresh parsley
07 - 1 tablespoon chopped fresh chives
08 - 1 teaspoon dried Italian herbs
09 - 1 clove garlic, minced
10 - Salt and pepper to taste

→ Meats

11 - 8 slices bacon

# How to make it:

01 - Preheat oven to 400°F and line a baking sheet with parchment paper.
02 - Wash and dry zucchini. Slice each lengthwise and use a spoon to scoop out the center, creating boats. Brush cut sides with olive oil and season lightly with salt and pepper.
03 - In a mixing bowl, combine softened cream cheese, shredded mozzarella, grated Parmesan, parsley, chives, Italian herbs, minced garlic, salt, and pepper. Mix until smooth and well incorporated.
04 - Distribute cheese mixture evenly among zucchini boats, filling cavities completely.
05 - Carefully wrap each stuffed zucchini half with one to two bacon slices, tucking ends underneath.
06 - Place bacon-wrapped boats seam side down on prepared baking sheet.
07 - Bake for 25 to 30 minutes until bacon is crisp and zucchini is tender.
08 - Allow boats to cool slightly before serving.

# Helpful Hints:

01 -
  • They taste decadent enough for a dinner party but are honestly just as easy as throwing vegetables on a pan.
  • The creamy herb filling stays moist while the bacon gets gloriously crispy, giving you two completely different textures in one bite.
  • Zero regret eating—keto friendly, packed with protein, and genuinely satisfying without any of the carb guilt.
02 -
  • Don't skip the parchment paper or the bacon grease will make cleanup a nightmare, and nobody wants to spend thirty minutes scrubbing when you could be enjoying your meal.
  • Scooping out the zucchini centers is easier if you use a small spoon or melon baller rather than a regular kitchen spoon—it gives you better control and you won't accidentally puncture the bottom.
03 -
  • If your bacon isn't fully crisp when the zucchini is tender, pull the boats out and place them under the broiler for two to three minutes while you keep an eye on them—this gives you perfectly crispy bacon without overcooked vegetables.
  • Leftover boats reheat beautifully in a 180°C oven for about ten minutes, though the bacon won't be quite as crisp the second time around.
