→ Assembly

16 - 8 small corn or flour tortillas, warmed
17 - 1 cup shredded red cabbage
18 - Lime wedges, for serving

# How to make it:

01 - Preheat the grill or grill pan to medium-high heat.
02 - In a small bowl, combine olive oil, chili powder, cumin, smoked paprika, salt, pepper, and lime juice.
03 - Brush the spice mixture evenly over each salmon fillet.
04 - Grill salmon for 3–4 minutes per side, until just cooked through and easily flaked. Remove from heat and set aside.
05 - Combine diced mango, red onion, jalapeño, bell pepper, cilantro, lime juice, and salt in a mixing bowl. Toss gently and reserve.
06 - Warm tortillas on the grill for 20–30 seconds per side until pliable.
07 - Using a fork or spatula, flake the grilled salmon into large pieces.
08 - Layer shredded cabbage onto each tortilla, top with flaked salmon, and add a spoonful of mango salsa. Serve immediately with lime wedges.

# Helpful Hints:

01 -
  • The mango salsa is like a sunny secret that brightens every bite.
  • The grilled salmon is smoky and tender--even picky eaters find it irresistible.
02 -
  • Leaving salmon on the grill too long dries it out--watch for flaking, not char.
  • Warming tortillas on the grill gives them that soft-chewy texture, and keeps them from tearing.
03 -
  • Drying salmon fillets before marinating helps the spice cling.
  • Letting the salsa sit for a few minutes before serving deepens its flavor.
