Salmon fillets baked and topped with a mango avocado salsa. Fresh, flavorful, and perfect for summer.

# What you need:

→ Salmon Fillets

01 - 4 salmon fillets, approximately 6 ounces each, skin-on or skinless
02 - 2 tablespoons olive oil
03 - 1 lime, zested and juiced
04 - 1 teaspoon garlic powder
05 - 1 teaspoon paprika
06 - 1/2 teaspoon salt
07 - 1/4 teaspoon black pepper

→ Mango Avocado Salsa

08 - 1 large ripe mango, peeled and diced
09 - 1 ripe avocado, diced
10 - 1/4 small red onion, finely diced
11 - 1 small red bell pepper, diced
12 - 1 jalapeño, seeded and finely chopped (optional)
13 - 2 tablespoons fresh cilantro, chopped
14 - Juice of 1 lime
15 - Salt and black pepper, to taste

# How to make it:

01 - Set oven to 400°F. Line a baking tray with parchment paper or foil to prevent sticking.
02 - Combine olive oil, lime zest, lime juice, garlic powder, paprika, salt, and black pepper in a small mixing bowl and whisk until blended.
03 - Arrange salmon fillets on the prepared tray. Brush the seasoning mixture evenly over each fillet.
04 - Bake for 12 to 15 minutes, or until salmon flakes easily with a fork and is fully cooked.
05 - In a medium bowl, gently toss mango, avocado, red onion, bell pepper, jalapeño (if using), cilantro, lime juice, salt, and black pepper until combined.
06 - Transfer baked salmon to serving plates. Spoon generous amounts of salsa over each fillet. Garnish with additional cilantro and lime wedges as desired.

# Helpful Hints:

01 -
  • That first bite feels like sunshine, and the salsa turns ordinary salmon into a showstopper.
  • The whole thing comes together so quickly, you’ll barely realize how healthy it is until you’re halfway through eating.
02 -
  • Once I rushed the salmon and baked it too hot—watching closely for that subtle flakiness is everything.
  • Waiting to cut the avocado until the last moment keeps it from browning and turns the salsa into kitchen magic.
03 -
  • Never skip lining the tray for easy cleanup—fish skin sticks.
  • A quick sprinkle of extra lime zest before serving amps up freshness unexpectedly.
